Chickpea Cauliflower Risotto
- Large Pot
- In a large pot with a tight fitting lid, sauté onion in coconut oil.
- When the onion becomes golden, add the Riced Cauliflower and stir for two minutes.
- Add tomatoes, water, chick peas, broth, seasonings, and stir well.
- Simmer uncovered until liquid is reduced.
